Erythritol, (2R,3S)-butane-1,2,3,4-tetraol, is a sugar alcohol (or polyol) that can be reduced from erythrose or erythrulose. Erythritol is naturally found in fruits such as grapes and pears or fermented foods such as soy sauce, miso, and sake and is fermented from glucose. It has 60-80% of the sweetness of sucrose, is very low in calories, and is less likely to cause digestive problems than other sugar alcohols (the US FDA recommends a daily upper limit of 0.78 g and 0.71 g per kilogramme of body weight for adults and children) and will not cause tooth decay. Because it can weaken the binding force between bacteria in dental plaque, it has the effect of decomposing dental plaque. Erythritol has been approved for use in the United States. It was first discovered by John Stenhouse in 1848.
